Today, we’re making a halal-friendly Three-Color Chicken Soboro Bowl.
What is Soboro?
Soboro is a Japanese-style topping made by cooking and breaking ingredients such as ground meat, fish, or eggs into small pieces.
Three-color Chicken soboro bowl is a colorful Japanese rice bowl topped with brown seasoned ground chicken (chicken soboro), yellow scrambled eggs (egg soboro), and green vegetables.
It’s also perfect for a lunch box, and it’s made with simple ingredients and an easy cooking process.

Halal-Friendly Notes
Halal Chicken
This recipe uses halal chicken to keep it halal-friendly.
No Mirin or Sake
Traditional Japanese chicken soboro recipes often use mirin and sake.
This halal-friendly version is made without them while still keeping a rich and delicious flavor.
Ingredients (Serves 2)

For the Chicken Soboro
- Halal ground chicken — 200 g (7 oz)
- Soy sauce — 2 tbsp
- Sugar — 2 tbsp
- Water — 70 ml
For the Scrambled Eggs
- Eggs — 2
- Sugar — 2 tsp
- Salt — 1 g (just under 1/4 tsp)
- Water — 1 tbsp
For the Stir-Fried Green Beans
- Green beans — 100 g
- Sesame oil — 2 tsp
- Salt — 1 g (just under 1/4 tsp)
For Serving
- Cooked rice — as needed
Make the Chicken Soboro
Add 200 g of ground chicken, 70 ml of water, 2 tablespoons of soy sauce, and 2 tablespoons of sugar to a frying pan.
Before turning on the heat, mix everything well to break up the ground chicken.

Once the chicken is broken apart, turn on the heat to medium.
Cook the chicken over medium heat, stirring constantly with chopsticks.
As it cooks, the chicken will gradually turn white. Continue cooking until the liquid becomes clear.

Turn off the heat when there is still a little cooking liquid left.
This keeps the chicken soboro moist, tender, and juicy.
It takes about 10 minutes from turning on the heat.

Remove the chicken soboro from the heat and let it cool before serving.
Make the Scrambled Eggs
Crack two eggs directly into the pan.
Add 2 teaspoons of sugar, 1 gram of salt (just under 1/4 teaspoon), and 1 tablespoon of water.
Mix everything well.

Once the eggs are fully combined, turn the heat to medium-low and slowly cook the eggs while stirring constantly.
Since eggs cook quickly, use medium-low heat instead of medium heat.
Other than the heat level, the cooking method is actually very similar to making chicken soboro.
Once the eggs start to firm up, they cook quickly, so keep stirring until they reach the right texture.

After about 5 minutes, the eggs should be cooked into small, soft curds.

Turn off the heat.
The scrambled eggs are ready.
Stir-Fry the Green Beans

Slice the green beans diagonally into thin strips.
I’m using green beans today, but you can also use other green vegetables you have on hand, such as spinach, green peppers, or edamame.
Green vegetables add a beautiful color to the dish.

Add about 2 teaspoons of sesame oil to a pan and heat it over medium heat.
If you don’t have sesame oil, any oil will work. But if you do have sesame oil, I highly recommend using it. It adds a delicious nutty aroma and nice flavor to the dish.
Once the pan is hot, add the green beans and stir-fry them.

Unlike the chicken soboro and scrambled eggs, you don’t need to keep stirring the green beans.
Stir them occasionally and let them develop a little bit of color. This brings out a delicious roasted aroma and flavor.

The cooking time is up to your preference. I like to cook them briefly so they still have a little crunch, but you can adjust the cooking time to your liking.
After about 3 minutes, the green beans have reached my preferred texture.

Turn off the heat and season with 1 gram of salt (just under 1/4 teaspoon).
The green beans are ready!
Assemble the Three-Color Soboro Bowl

Place cooked rice in a bowl.
Top the rice with the chicken soboro, scrambled eggs, and stir-fried green beans.
Create your own three-color pattern.
