Today, I’m introducing one of the most basic and important elements of Japanese cooking: dashi.
Dashi is the foundation of many Japanese dishes, which makes it a good place to start.

What You Need

Ingredients
- 1 dashi pack
- 600 ml water (about 2½ cups)
That’s all.
I’m using a halal-friendly dashi pack. Most simple Japanese dashi is naturally halal-friendly, but some products may include other ingredients. Because of that, I always check the label.
The ingredients in this pack are:
- dried sardines
- dried bonito
- kelp
- dried shiitake mushrooms

How to Make Dashi with Dashi Packs

Step 1: Heat the Water
Add the water and the dashi pack to a pot.
Turn the heat to high and bring it to a boil.
Step 2: Simmer Gently
Once the water starts bubbling, lower the heat to medium.
Let it simmer for 5 minutes.
Try not to let it boil too strongly. If the heat is too high, the aroma of the dashi can fade.
Step 3: Finish the Dashi

After 5 minutes, the water will turn a light golden color.
That color means the flavor has come out.
Gently squeeze the dashi pack against the edge of the pot to extract the remaining flavor, then remove it.
The dashi is now ready to use.
