Today, we’re making halal-friendly Japanese Miso Marinated Chicken.
This is a simple Japanese chicken recipe where chicken thighs are marinated in a rich miso-based sauce and then pan-fried until golden brown.
The ingredients are simple, the cooking process is easy, and the result is juicy, savory, and full of flavor.

Halal-Friendly Notes
No Mirin or Sake (Alcohol-Free)
Traditional Japanese miso marinades often include mirin and sake.
This recipe skips both to keep it halal-friendly.
Instead, a slightly larger amount of sugar and sesame oil is used to add sweetness, richness, and texture to the marinade.
Soy Sauce & Miso Choice
This recipe uses added alcohol-free soy sauce and miso.
Halal-certified products are also a good option if available.

Halal Chicken
This recipe uses halal-certified chicken thighs.
Ingredients (Serves 2)

- Chicken thigh – 300 g (10 oz)
- Miso – 2 tbsp
- Sugar – 1 tbsp
- Soy sauce – 1 tsp
- Sesame oil – 1 tbsp
- Garlic – 1 clove
Prepare the Miso Marinade
In a bowl, combine:
- 2 tbsp miso
- 1 tbsp sugar
- 1 tsp soy sauce
- 1 tbsp sesame oil
Grate one clove of garlic directly into the bowl.
Garlic is optional, but highly recommended because it adds a deeper and richer flavor to the marinade.
Mix well until fully combined.
The marinade should become smooth and slightly thick.

Prepare the Chicken
Pat the chicken dry if there is any excess moisture.
Trim any excess fat if needed.

This recipe uses two small chicken thighs.
Cut each thigh into 3 pieces, making a total of 6 pieces.
To help the chicken cook evenly, make small cuts in any thick parts and open them slightly to even out the thickness.

Add the chicken to the miso marinade.
Mix well until all pieces are evenly coated.

Let the chicken marinate at room temperature for 30 minutes.
If you have more time, you can marinate it overnight in the refrigerator for a deeper flavor.
Pan-Fry the Chicken
Heat a frying pan over medium-low heat.
Since the marinade already contains sesame oil, you usually do not need additional oil.
If your pan sticks easily, lightly grease the pan with a small amount of oil.
Once the pan is hot, add the chicken.

Cook over medium-low heat without moving the chicken too much at first.
This helps create a nice golden crust.
Because miso burns easily, keep an eye on the heat and lower it slightly if the chicken browns too quickly.
Cook the first side for about 5 minutes and flip the chicken.

Cook the other side for another 3 minutes.
Once both sides are nicely browned and the chicken is fully cooked through, remove the pan from the heat.
Serve and Enjoy

Transfer the chicken to a plate.
The chicken is juicy, sweet, and savory, with a rich aroma from the seared miso.
Despite the simple ingredients and easy cooking process, this dish turns out incredibly flavorful.
It pairs perfectly with rice and makes an easy Japanese home-cooked meal.
